Driving from Dallas to Park City. Any ideas on the best way to go to see the best stuff?

"Best" is not a word we use around here, as things that are regarded as "best" really is an individual thing. Your question is hard to answer as you don't tell us how long you have, what your interests are, and people often refer to the "best way" as the quickest route and "best stuff" as possibly a slower route.
Some options open to you would be to head towards Pueblo and then head on US 50 to Canon City and the Royal gorge bridge and continue West on US 50 through Currecanti Nat. Rec area and Black canyon of the Gunnison to Grand junction and the Colorado NM.
Heading past Pueblo to Colorado Springs you have Garden of the gods and Cave of the winds near Manitou springs and heading West on 24 you will come across the Pikes Peak highway toll road that takes you to the top of this famous mountain. You could then connect with US 50 [as above] or continue North to Twin lakes and through Aspen over Independance pass to I 70
Of course you could head further East into New Mexico and the Santa Fe area to Taos Pueblo and take any number of routes through Utah, such as going through Durango and the 191 to Moab and Arches and Canyonlands NP's. You could check out the "Million dollar highway on US 550 between Durango and Montrose, and such places as Bryce canyon and Zion wouldn't be out of the question. If it's a return trip look to going one way and returning another.
