las vegas to San Fransisco in 3 days (summer)

Need your advice
I will be arriving los Angeles on June 15th and will be traveling with my 3 kids (ages 23, 22 ,20)
My plan is to stay in Los Angeles for 3 to 4 nights – drive to San Diego for 2 nights… drive to Las Vegas for 3 nights and this is my problem: how to get to San Francisco…
One idea is to go through death valley to big pine (spend the night around there) to mono lake – Yosemite – spend the 2nd night somewhere on the road to san Francisco…

The second idea is to drive to Bakersfield and spend the night around there. Second day drive to Hearst Castle and spend the night around Monetary than continue to San Francisco…
Spending 3 nights there and driving down on highway 1 (one night in Carmel maybe)

what will be the more interesting (for my kids) route to take (I do not want to drive many hours each day)

This year that question is easy. Right now, the Pacific Coast Highway is closed at Big Sur due to a Bridge Out. That Bridge is not set to reopen until around Sept. 2017, so that route won't be an option for this trip.

The only thing you'll have to be aware of with going via Yosemite is that you'll have to check to make sure that Tioga Pass is opened by the time you travel. The pass typically opens for the season between mid-may and mid-june, so you should have a pretty good chance of it being open, just not 100%. If it is still closed, then you'd need to go via Bakersfield and then up - but that would still be possible on your timeline.
