Quick question for anyone that has taken this trip before. There are two basic trips available and I'm wanting to know which one to take. Should I hook up to I-70 West or hook up to I-84 West?

I'm not sure that I understand your question since the most direct all-Interstate route entails using both I-70 and I-84. That route would be I-35/I-135 up to Salina KS; I-70 west to Denver; I-25/US-287 north to Laramie WY; I-80 west to the Salt Lake City area; and I-84 west to the Portland area. Also note that this trip will take the better part of four days at best, so you'll need to plan at least three overnight stops.
