Planning cross country trip, STUCK on TEXAS!

I'm planning a summer road trip with my husband from San Diego to Norfolk, and everything is going pretty well with plans at the beginning and the end, but I'm stumped as to what to do to with Texas.

I'll be visiting a friend in White Sands, NM and know my next major stop will be NOLA. I figured to check out San Antonio and see the Alamo. But White Sands to San Antonio is too long a drive to do in one stretch and the same is true for San Antonio to NOLA.

So, what to do? I think I'll have to find a break in between the two segments, but really know too little about TX. Any suggestions on route and places to check out to connect my travel points?

Fort Stockton would probably have the best selection of hotels between NM and San Antonio. SA to NO is doable in 1 day, so I'd leave that open and if you get tired you shouldn't have a problem finding someplace along I-10 to stop.
