I know you already have a ton of suggestions. Here are a few more. I'm one of those people who has been to Disney more times that I can imagine. I think we've seen it all.
You said that you already booked the places that were suggested by other people. And they are all great. So I wont waste your time repeating them.
But I will add that I would recommend a lunch or dinner at one of the countries in the World Showcase in Epcot if you are visiting that park. The one thing we have not done, but always wanted to do, was a late dinner at the resturant in England in the World Showcase. Book it now and you can request a table and reservation time for the laser show. I've been told that that is the place to get the best view and if you get one of the last reservations of the evening then you wont have to give up your table and you get a prime seat for the show.
Since you have kids I would definitely recommend a character breakfast! Its great fun even if they are not little anymore. (I'm 30 and I still love it - its all about being a kid at heart.) The Grand Floridian has a nice sit down breakfast styled after an English tea with characters like Mary Poppins and Minnie Mouse. The Contemporary resort has a buffet breakfast with Mickey, Goofy, Minnie, Chip and Dale, etc. And I think there is a breakfast (or maybe other meals too) in the castle in the Magic Kingdom with a princess theme. The Contemporary and the Grand Floridian are two of the hotels that the monorail visits, and that would be a fun way to get to the park you are visiting that day as well.
It is wise to book a reservation early to get your preferred date and time. But all the parks have booking services at the guest services area near the enterance of each park. You can make or change any reservation. I would recommend stopping by to do so when you first get to the park. We would almost always wait until the mornings to decide where we would eat each day and I don't remember ever having trouble making a reservation for a time we wanted.
And one last thought - the resturants are great but they can be time consuming and the meals are usually very large. You may not want to eat every meal at a sit down resturant. There are lots of places scattered throughout the parks where you can grab a quick bite and then you can get back to the fun of the parks. Kids meals are great, even for adults, if you dont want to feel stuffed all day. Or you may want to share some meals. That way you wont spend half the day feeling like you need a nap and you will be able to sample more foods as you go.

A must for us is the Brown Derby at MGM with the Fantasmic package. My parents took the kids to the SciFi drive in and they really like it. We also like the Crystal Palace alot a Magic Kingdom. In my experience, the dining package is only a deal if you like to have big meals every meal which we dont, we might do a quick breakfast at our room, a light lunch then a big dinner, or just the opposite. What are the dates your staying at the campground? We are there July 2nd thru the 12th.
Our meal package includes 7 sit down dinners for four, and seven casual lunches at any of 165 WDW "Counters", and a snack.
(We added a day BTW for another $90)
The Ft Wilderness extravaganza is the one sit down exception. It would soak up 2 sit down dinner credits so we skipped that.
The restaurant booking girl was super helpful, and very patient in booking our dates.
We went with the meal plan because seems we spend more on Disneyland meals (Calif) than an entire trip to 'Vegas.
