The following may work for you since you are working your way south and east toward Texas.
I recently made a run to Pampa,Texas from N Colo using the following route (only recommended in good weather when roads are dry)-
At Loveland, (I-25 MM257) take US 34 East thru Greeley (stays 4 lanes but gets down to 40 for short stretch). Continue US34 East to join I-76 East. Continue to Brush. At MM90 turn south on CO 71. That runs into Business I-76 in town and you follow 71 to the E before it turns south going out of town. CO 71 runs straight south thru empty country at 65 mph down to Limon. Sparsely travelled though most traffic are trucks.
At Limon you've bypassed the metro mess and you can decide your route from there. You have I-70 to go east or use US 385 and 287 to continue further SSE. This southern leg isn't interstate but it's at least 65 mph or more and often 4 lanes. Very scenic if you care to imagine herding cows across that country 140 years ago...
In bad weather, stick to the interstates as much as possible and US highways if you can't.
