This British family did a very similar trip to what you're planning, except that they didn't visit Zion and Bryce. I reckon their videos are some of the best produced on YouTube, well worth viewing although you might want skip through some bits:
They did a helicopter trip from Vegas which landed beside the river in the Grand Canyon - impressive but rather expensive.

This is a video of the Angels Landing trail in Zion. While the top-most section is extremely hazardous, the first part (up to around the 0:43 second mark on the video) is walled and safe and leads to a fantastic view even if you don't want to proceed further.

Another video, this one is an official US National Park Service video about the excellent Hermit's Rest free shuttle bus route on the South Rim of the Grand Canyon - IMHO something very definitely to do if time allows:
Be sure to get off the bus at most or all of the overlooks. If you decide to walk between some of the bus stops on this route then I would highly advise keeping to the road especially if you have children because in places the trail is perilously close to the edge with extremely dangerous drops.

Just to save confusion and repeat was has been said, NO Helicopters land in the National Park area and this would have been to the West rim.
