I will be flying into Denver with some friends and driving around Colorado and Utah for 3 weeks with backpacking and climbing gear. I was wondering if any of you have suggestions for outdoor things to see and do around those general areas?

Hi and Welcome to the Great American Roadtrip Forum.
You have chosen the two States which probably have more than any others, especially when it comes to climbing and hiking. Many books have been written about them, and if you spend a little time around these forums you will find a treasure to fill your specific interests. Use the search function, or simply go down the bottom of the page to 'similar threads'.
When you have more specific questions about any area, feel free to ask.

As above, there is no end of things to see and do in these two States and it's an area that has the highest concentration of the National Parks, great scenic drives. This trip from Denver into Utah is by RV but should provide you with a general feel of the area. With 3 weeks you would be able to go further into Utah, one option being to head to Bryce canyon from Arches NP [Moab] via Capital Reef NP and Utah scenic By-way 12 through Escalante. From Bryce you could continue to Zion and then through Page AZ [Lake Powell/Antelope canyon etc ] to Monument Valley and back towards Four corners and Durango. Between Bryce and Page, visiting the North rim of the Grand canyon would also be possible, but much will depend on whether you would like to spend more time in one place or keep on the move.
Do a little reading and research and when you have a few basics down and/or more specific questions we can help to fill in the blanks and fine tune your trip to your liking.
