If you are not going to drive much more than 8 hours a day, add 1 day to your trip. This would put your stops in Knoxville, Little Rock AR, Amarillo, TX, and Holbrook AZ. I show Fayetteville to Knoxville at 6 hours 45 minutes with no stops. What I might do is try to push the 4th day to Flagstaff if the weather is good, and get a very early start the next morning. This would give you the best chance to get into LA before the height of evening rush hour.
If you like good steak, I can highly recommend the Big Texan in Amarillo. This is the place where if you can eat a 72 ounce steak in 1 hour, you get it free. Their smaller steaks are excellent and the prices are reasonable, as I remember I think I got an 18 ounce ribeye dinner for about 22 bucks last year.

I personally don't care for the SC-GA-AL-MS route to Memphis, largely because it involves lots of non-Interstate, involves Atlanta, and is essentially the same distance to Memphis as I-40 would involve.
I concur on the NC 87 connecting to US 421 to reach Greensboro and I-40. Still, it depends a bit on what side of Fayetteville you're leaving from as to how much better this might be than I-95 to Benson and I-40.
Be thoroughly aware you want to start early on the Wed before T'giving. From at least Raleigh to Asheville, it's gonna be ugly on I-40.
Knoxville should be an easy first day--if you start early.
