We are looking on taking a road trip including Zion National Park and Bryce canyon and would like to hit one or two more beautiful hiking/ viewing spots along the way. Looking for suggested routes and ideas.

Welcome to the RTA Forum!
The most direct route is I-15 to I-70 to I-76 to I-80 to I-35.
There are several other National Parks right along the way, including Capital Reef, Arches, Canyonlands, Rocky Mountain, as well as numerous other parks and attractions that would also be near the direct route, or within a reasonable detour.
How much time do you have for this trip?
Time available is key to trip planning as there are literally thousands of options over such a distance. The drive from Bryce canyon to Capital Reef using UT scenic 12 and UT24 is a spectacular drive and you could also visit the Grand canyon North rim between Zion and Bryce, again it's about time. Colorado has some amazing places to visit and great drives.
See the sites in Utah as planned and than head directly north to reconnect with I15 somewhere than up to Jackson Hole to Grand Tetons through Yellowstone and exit the northeast corner either to Cody to go over the Big Horn to I90 to the Badlands than up I35(adds about 6 hours drive time) or go to Billings from Yellowstone and to I94. All good routes including the fastest route already mentioned.
Cedar Break is great being right on the highway and some hiking.
