GLC has already spelled out the route in quite great detail, so I'm not sure what more help you'd want with that.
I will say, you should look at the route he laid out on an actual map, so YOU know where YOU want to go.
When it comes to mountains, the route GLC is recommending across the Rockies IS I-80, he's just recommending you wait until you are west of the Mississippi to pick it up. I would also say you really don't need to worry about mountains that much anyway. If your car is in good enough condition to make the trip across country, it should not have any problems with any elevations you'd be dealing with on the interstates, even if you did go across the highest points in Colorado.
I-80 across the Rockies is a much more gradual climb than I-70. However, it does have a tendency to get windy. Getting from I-70 in Utah to I-80 is not very straightforward.
I'd recommend you go over to Walmart and buy a Rand McNally Road Atlas and plot out my suggested route.
As I mentioned in an earlier post, you will need good maps, and if you are covered for breakdowns, etc. by AAA the maps will be free.
Do not hit the road without maps. Do not rely on your gps. Many have done so at their peril, even fatal. Knowing your route marked out on good maps is the only safe way to travel. If your daughter is old enough you can get her to follow the route on the map.

Thank you guys! As part of my insurance I have road assistance, but I will call them to make sure for how many miles they will cover me if I need towing. Also, I will go get my map Asap. Sorry for my " ignorance" when it comes to road trips, but thank you so much for all the help.! ;)
