I actually enjoy driving I-5, but mostly it is because of the relative speed through which one can move through OR & WA. If time is not a problem -- by all means, move to the coast as soon as possible. For instance, Long Beach, WA is pretty cool, if you like driving on the beach and the world hq for kite flying is there. The toll bride into Astoria is great!

Without question the finest state park system in the lower 48 is found in Oregon -- Every single one is worth a stop. My personal favorite is Beverly Beach near Siletz. If you like cheese -- the factory tour at Tillamook is fun.

Redwoods grow where redwoods like the cool moist conditions -- the biggest ones are in parks -- but you will be able to find plenty on the side of the canyons that lead to the ocean.

Traveling on Hwy-101 is SLOW going -- but beautiful!
