The quickest and main Interstate route will be US 93/I-40 to Vegas and the I-15 up to I-90
This is aprox a 1430 mile journey and allow time to travel into day 3.
Another option, you could take 93/318/93 North of Vegas to Twin falls and then hook up with I-84 to Boise and onto SR 55 New Meadows and US 95.
This is 1275 miles and won't take much longer to travel.

I would not recommend taking a rental truck over the Hoover Dam. Security procedures will delay and inconvenience you, it will be thoroughly searched and they may require you to unload and reload it.
Take US-60/89/93 out of Phoenix to I-40 and Kingman. Take US-93 out of Kingman to AZ-68 to Bullhead City. This will put you on CA-163, take that to US-95 back to US-93 and I-515 through Las Vegas. Pick up I-15 there to I-90. That is the detour route that the 18 wheelers are required to use as they are not permitted across the dam at all.
This will give you overnight stops around St. George, UT and Pocatello, ID.
