River rafting on the Rogue River
The Oregon Caves
The Oregon Vortex near Gold Hill, OR
Newport, OR: great aquarium, Ripley's Believe it or Not, Undersea Gardens
The Sea Lion Caves
Take wind-surfing lessons in the beautiful Columbia River Gorge...especially in the Hood River area
Mt. St. Helens
Museum of Flight in Seattle
Riding any of the ferries or harbor cruises in Seattle
Paddle a kayak or canoe in Lake Union in Seattle
Ye Olde Curiousity Shoppe on the waterfront in Seattle
Space Needle

We just returned from a similar trip...last night, actually! I'm assuming you're taking the 101. If not, please do! We took the I-5 north, and man was it boring! The 101 is all kinds of interesting. Our favorite stops:
Trees of Mystery
Devil's Churn State Park, which we found quite by accident. The website says plan several hours, but we spent about an hour at high tide and that was sufficient.
Tillamook Cheese Factory; my 7-year-old son's top pick.
