There are two main routes -- either I-40 or I-70. Since you want to visit Las Vegas, I'd take I-70 and I-15 as it is a little more direct. If it is a round trip drive, you might consider using I-40/I-44/I-70 for your trip home. Both of these routes are great for scenery.

Go to Zion National Park in Utah.
Give yourself at least 6 hours and hike on the trail that starts at weeping rock and heads up to the Observation point. Here is a link with a map.

I hiked the beginning of this while on an Orient Express train trip, but my time was limited. However, it has stuck with me as the most beautiful place I have ever been, and the hike is incredible. We only got part way up, but the walk stretches across red cliffs and is just completely breath taking. If you are driving past Zion, don't miss it. Its amazing.
