road trip from san-fran to mexico

I'm an irish student just finishing up my summer here with a road trip from san-fran as far down south we can get , packing in as much scenery as possible in 7 days, any advice and tips on were i should go would be greatly appreciated!

Jack, it goes without saying perhaps that one the most scenic coastlines in the world lies just to the south of you, between Carmel and San Luis Obispo. If you haven't seen it, you should!

I would also drive NE out of the San Diego area and visit Julian, as well as the Anza-Borrego Desert Park. Anza-Borrego is starkly magnificent, and Julian is a quirky little town along the way. The drive is fairly scenic.
