There really is nothing throughout Kansas, and Denver would be a great first place to stop.
Better be careful of snow in the higher elevations of Colorado.
You are correct there is nothing really in Kansas. Estes Park is great and we always like Rocky Mountain National park. There is a one way road up that is very scenic. Enjoy your travels.

If your situation allows it you should go a little north into Missouri and visit Branson, Missouri. Top of the Rock is a beautiful place to visit. There is alot to do and see in Branson.
I agree with Michael about taking the bus to Buffalo. It will coat less and having a car at Niagara Falls will make that part of the trip more enjoyable.
Once in Canton, you can check out the Pro Football Hall of Fame.
That was great advice about the rental car agreement. Many of us don't realize the problems you can run into.
