If I were to follow HWY 40 to the east, then which routes would I be better off weather-wise, taking HWY81-HWY78 through Appalachian Mountains, or 85-95? I want to avoid snow as much as possible.

I-40 is different than Hwy 40 -- I am assuming your are intending to travel on the interstates and not state/Federal highways?
In any case I-85 is a better choice for reduced snow - but it all depends on the weather. Remember, snow is easier (& safer) to drive in than rain in most cases. Relax, your trip will be fine.
Right, I meant Interstates, not Highways.
