Another option is to take I-15 south out of SLC to Spanish Fork, then US-6 and US-191 to Green River to pick up I-70. I-70 through western CO is a great scenic drive. This is only about 20 miles and less than an hour longer than going via Laramie to Denver, but it does go up to about 11000 feet at Vail Pass and the Eisenhower Tunnels.
