Haha, yeah you're right Dave. And it's really a pleasant problem having to choose which things to see and which route to take.
One thing I'm wondering about with this new plan is if we will be able to be there in time for the fall colors? I've looked at pictures from Utah/Colorado in the fall and would LOVE to be there for this. But I'm wondering if in late August the leaves will have changed color?

It's tough to predict when the leaves will change, but it's normally during the second half of September and into October depending on weather and elevation. We have witnessed glorious Aspen colours in Colorado during October at lower elevations and bare trees at higher levels so you might be lucky 'up top'. It's gonna be spectacular whatever ! ;-)

Crater Lake

Crater Lake is one of my favorite places in Oregon.It would be a shame to miss it.
You can still add Crater Lake and the Oregon Coast by going from Portland along the Columbia River Gorge to the The Dalles and across to Bend and onto Crater Lake. From there down over Grants Pass to Cresent City and along the Coast to California.
A great drive through the mountains.
We drove from Portland to Crater Lake in a day and plenty of time to experience the Columbia River Gorge as well.A beautiful drive to the Dalles.
You could even spend a night in a cabin at Union Creek (not far from Crater Lake) and experience some of the beautiful home cooked pies at Bekkies Cafe).
