Have you thought of driving the truck, flying back to NC and driving the car? It would be a lot cheaper, and with a week and a half, you have the time.

I have my doubts that the mustang will make it, I do not want to take that chance.
UHaul's war with Ford really does have you caught in quite the bind. There isn't a good option, and I'd personally be very nervous about trying to pull it on a dolly with the front wheels on the ground, and only secured by the steering wheel being tied down. I think I'd much rather go front wheels up, with the driveshaft disconnected.
On top of that, once I did get it secured, I certainly wouldn't want to try to mess with it an load and/or unload it until I got to my destination. I can understand wanting to drive the mustang, and if you feel confident driving it from St. Louis to LA, I can't see how driving it from NC to St. Louis would be a problem. (Or taking it on a more direct route via I-10 as you mentioned before)
Otherwise, I think I'd be seeing what options were available to have the car shipped because that could be the only other real option.
The good thing is that you have enough time to make a steady drive and perhaps just have a day off from driving somewhere along the way. If you are using ratchet straps to secure the car, I usually stop after a few miles at the start and you will normally always get an extra click or two to re-tighten as the car settles. After doing so just check everything before starting out in the morning and each time you fill with gas and take a break.
I don't know about your particular model of car, but over here in the UK, we have only ever worried about the driven wheels on an automatic transmission being off the ground to save it burning out the transmission. With a manual gearbox set in neutral there has never been a problem that I am aware of, although research this and decide for yourself.

So i was lucky the dealer of the dolly was kind enough to offer full refund and put it to a 18 ft trailer
