Unfortunately we are unable to put it off until we have more time since my Grandmother is extremely sick. Is it two weeks round trip or one-way? If it is roundtrip, (and with the three days in Portland, it sounds like it must be) you will really need to be in "hammer-down" most days. For that reason, I would suggest sticking to the Interstate highways as you go. (It takes a full five days for most of us road-hardened roadtrippers to cover that distance).
I would suggest I-70 for the out-bound leg (with brief time-outs for stops in Pittsburgh, Columbus, Indianapolis, St Louis (the ARCH), Kansas City, Denver the Colorado Rockies and then north up I-15 to I-84 and over.
