. There are a number of tips and suggestions for renting a RV on this board. Is caravan the same as an RV? One of those threads can be seen here. Yes, you can pick-up in New Jersey and drop in LA, but it is very far more expensive than staying in motels because of the distance you need to travel each day.
Hmmm -- seven days? Uniquely American? Well, I think I would zoom across the country on I-70 (see the St. Louis arch) and see the plains and zig zag around Colorado, Utah, Arizona and Nevada and then zoom to LAX.

A variation on Bob's advice -- fly to Las Vegas and rent a van/car/RV here. Within five travel hours time you can be in five national parks and dozens of state and regional parks. Plus, this is Las Vegas and after six days exploring you can catch a quick flight to LAX.
