2 weeks in July seems like a good time for a casual sightseeing road trip to get out of the heat of Phx and head to Brookings, OR. Been to many places along the southern CA coast and also southern CA Sierra Nevadas, although I never get tired of driving US 395 as far as Bridgeport. Don't mind sleeping in my SUV or finding a last minute motel or campground.
That sounds like a fun trip that will make a nice loop. If you continue north inland I would recommend Lassen Volcanic NP and Burney Falls as 2 good stops and I would be tempted to go as far north as Crater Lake before heading to the coast. Heading south down the coast I love the Newton B Drury scenic parkway through Prairie Creek and the Avenue of the Giants in Humboldt SP. There is also a lovely Redwoods walk near Berry Glenn called the Ladybird Johnson Grove. Lots of other great places to choose from like Point Reyes and Marin Headlands that has great views of the GG bridge and Bay area, fog permitting.
Please keep in mind that a long bridge through the Big Sur area has been declared totally unsafe due to mudslides! Only local residents are allowed through the area. Every one else has to take a long way around.
