I will be driving and want to hike about two hours each day along the way. I'd welcome any suggestions for the Las Vegas to Colorado Springs portion of the trip (I 15 & 70). I've been to all the National Parks in Utah. TIA.

Finding as quiet place to get an hour or two's hiking exercise is never hard no matter where you are, so here are a few opportunities on your route. You can start close to 'home' with Valley of Fire State Park just outside Las Vegas if you haven't gotten to it while you're in town. And then there's the urban walking trail through St. George UT with its historic homes, Fremont Indian State Park is another opportunity in Utah. Thin in Colorado there's Colorado National Monument and, while it doesn't have hiking trails per se, Rifle Gap State Park does allow one to walk the entire perimeter of the lake. Finally Castlewood Canyon State Park will get you into the spirit of the Colorado Springs area.
