Virgin road trip planner

Hello all! I need help in planning a road trip for me and my husband of the east coast, ideally staring in New York and ending in Florida, or the other way around. I have absolutely NO IDEA where to start, we're thinking that we could take two weeks off from work to do so, and it would have to be between may and july. We want to stay in b&b's and hotels, no camping for us! Also, to make it a bit of a challenge for all you veterans, I've done white water rafting and canoeing, and I'd love to try again, any good rivers along the way? Any takers?
