We will be heading out from the Seattle area to take our daughter to college in Haviland, Kansas mid August. I realize the time is tight, and we don't have a ton of time left for planning, but would appreciate any advice on routing, places to avoid, places not to miss, etc.

The Shortest/Fastest Route is going to be I-82/I-84 to Utah and then over to Denver and into Kansas. Its a drive that can be done in 3 very long days.
However, There are lots of other options, and a ton of different places you could stop. That, however, is going to depend upon what kinds of things you are interested in and how much time you have available for your trip.
To be more specific, the fastest route is I-90/I-82/I-84/I-80/I-25/I-70/US-183. This can be done in 3 long days with overnight stops in Twin Falls ID and Cheyenne WY. If you only have 3 days to make the trip, this is how you should go, and you won't have time for diversions or sightseeing except out the windshield at 70+ mph.
You can save time by taking the E-470 tollway around the northeast side of Denver, you will be mailed a bill after the fact, it takes a picture of your license plate.
