We're taking a drive from Dallas to a friends home in Tennessee taking I40, then on to Asheville, NC in October and wonder what is the best SCENIC route to come back home from Asheville, staying off I40? Maybe through Georgia? Suggestions welcome.

Assuming that you don't want to spend too long on the drive back, say no more than three days, I'd suggest US-74/US-64 across southern Tennessee to Highland and then take the Natchez Trace Parkway down to Jackson, MS and then finish up with I-20 back into Dallas

To be able to give any meaningful information we really need to know a bit more about you and your plans. How long do you have? What are your interests? etc.
But if you are just looking for scenic routes, may I suggest that you purchase a Road Atlas, such as Rand McNally or AAA, and follow the routes which are marked as scenic routes. They are hilighted or have dots along side them on all maps and in most road atlasses.

We are newly retired and would like to take 2-3 days back from Asheville. I was hoping to hear about any unique towns, motels, historical sites....not just a scenic drive. I have a Road Atlas.
...you very specifically asked for (and only for) a scenic drive. The route I suggested goes by at least three major Civil War battlefields (Chickamauga, Shiloh and Vicksburg), Elvis' Birthplace (Tupelo, MS), the route used by Mississippi flatboat operators (the Natchez Trace) to return home and on which Meriwether Lewis, of Lewis and Clark fame, died, and the town where Bonnie and Clyde were gunned down (Gibsland, LA).
