Sounds like an excellent time to be visiting California -- Welcome to the Great American RoadTrip Forum!

We will be staying near Oakhurst for a couple of nights and plan to ride into Yosemite National Park. What is the availability of petrol (gas) in that area?
Shouldn't be much of a problem ---
Gas Stations: Gas stations are open year-round at Wawona and at Crane Flat, and seasonally at Tuolumne Meadows on Tioga Road. Gas is also available just outside the park in El Portal (Highway 140). Pay-at-pump service is available 24 hours-a-day with a debit or credit card. The Yosemite Village Garage handles major repairs. Emergency road service is available by calling (209) 372-8320.

We will also be doing PCH from Carmel to LA; again there appear to be limited gas stations. Is that correct?
There are some limitations, but there will be plenty of fueling locations within your range.
One of the best motorcycle touring sites for California is managed by RTA forum member, Pashnit, I would check out his forums for more information. ...And his photos will make you drool for getting over here early and staying late!
