I think if I were in your shoes, I'd be doing the exact same thing. I always enjoy taking a new route if time allows, and there's lots of things along I-40 to potentially stop at.
How much time are you planning on spending on the road and what sort of things would you like to stop at? Do you plan on driving straight south to I-40, or will you cut diagonally via I-44 at St. Louis? That would put you along the path of Route-66, which might be of interest to you.

From St. Louis to LA, you will be following the famous Route 66. Often, it will be the road running right alongside the interstate. If you have the time, get off and enjoy it. Just be careful, you might get hooked. It will be a trip back into the past. There are still lots of old mon and pop motels, restaurants, and tourist traps.
Not knowing how much time you have, you can always hop back on the interstate if you get behind.
