 Swiss Potato Burgers

Dick Miller, of Arapahoe, Wyoming, won first place in the Wyoming State Beef Cook-Off with this recipe!

1 lb. ground chuck, 80% lean
1 cup frozen hash browns, thawed and well-drained, or 1 cup peeled, shredded potato
1 egg
6 ounces (6 slices) natural Swiss cheese, divided; 2 ounces
(½ cup) shredded and 4 slices left whole
1½ teaspoons seasoned salt
½ teaspoon black pepper
4 teaspoons Dijon mustard

Mix together ground beef, shredded potato, egg, ½ cup shredded cheese, seasoned salt and black pepper. Form into four patties, ½-inch thick.

Pan fry in non-stick skillet or grill until centers test 160° (10-12 minutes). Place one slice of Swiss cheese on each patty during last two minutes of cooking time. Serve with 1 teaspoon mustard spread over cheese on each burger.

Makes four servings.
