  1. Default Biking a couple houndred miles

Me and a couple of my friends were planning to go from New Jersey to either the Poconos or Maryland. We were gonna bike 50-70 miles a day. How legal would it be to randomly pull off the road and set up a tent for the night. If it isn't legal what would be the best way for us to stop for the night and sleep without spending a ton of money.

No, just pulling off the road and setting up a tent is not legal. It's quite likely to get you, at best, a rude awakening from a local sheriff's deputy.

If you want to camp, you need to look for campgrounds on your route. If you are following a popular bike trail/route, its pretty common to find legal camping at campgrounds right on or near the trail. Otherwise, you'll have to look for budget motels or possibly hostels.
