    Default This Sunday ?

Hello and welcome to RTA !

When are you travelling ? As its a Fall or winter trip you may have limited options with snow and road closures in the mountains possible.

Default One or 2 nights ?

You won't have time for many 'distractions', so I would perhaps look at heading to the coast and driving up around Big Sur, providing you do not have to be in SF until late in the day. That would mean a full day on the road from the GC and make it as far as Lost Hills CA. Then you would need another early[ish] start to head to Cambria and up the coast to Monterey. Hmmm one moment, your title says 1 night but your question includes 2 nights, 8th and 9th which makes a difference. ??

I would plan on going up the coast. First day, you could drive to Tehachapi or Bakersfield via I-40 and CA-58. Second day, drive to Cambria via CA-99 and CA-46, and start up the coast. That night, you could stay in the Monterey area.

On the first day you could detour onto a section of route 66 through Seligman to Kingman if you were to stay in Techapi or Bakersfield. There is not much along this stretch of 66 but Seligman is a fun 'whacky' route 66 town and it gets you off Interstate for a while. As above, you could then continue to Monterey for the night or stay in San Simeon and see if there are any Hearst castle tours available that day before continuing to SF next day while enjoying the sounds and sights of the coast. If thats not your thing you could still stay in San Simeon/Cambria and see a lttle more of the coast by heading a little further south from Bakersfield to Morro Bay and up through Cayacus and Cambria.
