    Welcome!

Via fastest route with no sightseeing, you are looking at 3.5 days just to make the trip via fastest route. With a 1 year old, you need all 4 days.

I'd take I-5 to CA-46 to CA-99 to Bakersfield, then CA-58 to US-395 to I-15 to I-10. This avoids going through the LA "heart of the beast". Look at overnights around Palm Springs, Tucson, and Fort Stockton.

CA-58 to I-40 to Amarillo, US-287 to Fort Worth, and I-45 is an option. This would put your overnights in Needles, Albuquerque, and Wichita Falls.

    Default The Other Option

No matter how you go, this trip is going to take 3+ days with the exact size of that "+" depending in the very unpredictable whims of your one-year-old, how many times you stop and for how long. Since you've already done the I-40/US-287 route, let me suggest an alternative which should take no longer. That is to take I-5 down to the Los Angeles Basin, use I-210/CA-210 across its northern side and then take I-10 all the way to Houston. Either way you go, there will be plenty of places to take quick, relaxing stops that won't slow you down too much but will still let yo get a feel for the countryside you're traveling through.

See my first suggestion. You will be hitting LA in rush hour.
