I can't seem to find where in LA you're starting from, but assuming it is somewhere near LAX, you'll still be in traffic -- even at 5:00 am, but it will be less than at 7:00 am by a few thousand vehicles.

My report in another thread, along the same lines as some comments here:
"Trip is now over for this part and it was a hoot:
- addition: we did Hoover Dam first - liked it a lot.
- Grand Canyon: got there just in time for sunset - great colours! Explored point views until afternoon and then on the road again (addition: we also did sunrise)
- Saturday night in Kanab, Utah - all bars closed at 9 PM, and no taxi service in town (closest bar just across the state line 5 miles ways). But what an experience, loads of fun! (ADDITION: we drove there via Desert View Drive to the Cameron Trading Post, and north on 89 and took Alt 89 over the Navaho Bridge, through Marble Canyon and past Vermillion Cliffs. Well worth it. really.)
- Sunday - back top Vegas via Zion (amazing) and Valley of Fire (would have been probably also amazing, had we not seen what we saw before it...)
We ended up doing 850 miles in three days, and it was not too bad.
