The trip itself isn't super long, only about 5 hours, so that leads me to question - how long do you have to take this trip?
Suggestions will vary depending on if you are leaving at, say, 7am and hope to be there for 7pm, or if you have a longer time to take the trip.
You could stop in Philadelphia and that would have all that you are looking for - beyond the historical places in the area, I found this list of breweries in the Philadelphia area.
There is the Mutter Museum, which seems fascinatingly creepy.
Then there is the Insectarium

The Old Barracks Museum in downtown Trenton, NJ tells the fascinating story of what happened after Washington Crossed the Delwarare in December 1776. Well worth a stop.
